The last post workout recipe you'll ever need

I love to run. 
I love to cook.  
I love to cook food that makes me feel good after I run. 

Let me tell you, replenishment does not have to be the same boring bagel and banana that so many of us eat after we work out.  Sure, quick and easy carb centric foods are a great way to refuel, but adding some flavor to your post work out routine - that feels good. 

Here is my Refuel Special, a quick and easy recipe that will keep your engine humming after a tough work out.

Ingredients:
1 whole wheat/whole grain English Muffin
1 tbsp dijon mustard
1/2 avocado cut into thin slices
1 cup spinach
1/8 cup sliced red onion
1 tbsp balsamic vinager
3 tsp olive oil
2 slices lunchmeat style turkey breast
1 egg
pinch of cilantro
salt & pepper

Preparation:
Liberally spread dijon mustard on toasted English Muffin and top with slices of avocado.
Toss onions with the spinach and place on top of dressed English Muffin
Gently drizzle the balsamic over the spinach
Heat 2 tsp olive oil in medium skillet, add turkey breast and season with salt and pepper
Cook over medium heat until brown and slightly carmelized, about 3-5 minutes
Add turkey over top of spinach
Heat 1 tsp olive oil in small non-stick pan, add egg, season with salt and pepper
Cook egg over easy, about 3-5 minutes
Place egg on top of the turkey
Garnish with 1-2 slices of avocado and pinch of cilantro





















The runny egg yolk mixes with the balsamic and the dijon to create a tart and spicy layered dressing that plays so well with the creaminess of the avocado and the sweet crunchiness of the spinach and onion. The browned, carmelized turkey perfectly cuts through the the richness of the other flavors.

And at about 600 calories it's perfect as breakfast or lunch and chock full of carbs (43g), protein (25g) and good fats from the avocado and olive oil helping your body recover the right way. Depending on the intensity of your workout, you can supplement this with a banana on the side or substitute a bagel for the English Muffin to increase the total carbs.



After your run this weekend, take 15 minutes and reward your body with some flavor.
